To make pesto-mayo spread: combine pesto and mayonaise in a small bowl, stir to combine.
On one slice of ciabatta bread, spread pesto mayo, on the other slice spread 1/2 of the goat cheese, then layer half of turkey, roasted red peppers, and desired amount of sliced artichoke hearts. Top with first slice of bread.
Assemble second sandwich the same way.
Brush outside of bread slices with olive oil. Grill sandwich in a grill pan or on a gas grill. Press sandwich down onto grill using a sauce pan or panini press. Grill until bread is toasted and cheese is melted. Serve hot.
This sandwich would also be great with provalone cheese.
