Mashed Potatoes

Serves 4
Ingredients
1 lb russet potatoes 1 inch dice
1 cup butter cubed
1 cup cream
1 tbsp salt
2 tsp white pepper
Directions
Place potatoes in a large sauce pan and add enough COLD water to cover. Add 1/8 cup salt to water. Bring to a boil and cook for 20 minutes. Drain, return to pan. Add butter and half of cream. Mash with potato masher. Add more cream if necessary. Season with salt and pepper to taste.
