Apple Raisin Stuffing

celery stalks chopped

onion chopped

tsp fresh thyme minced

tsp fresh oregano minced

lb pork breakfast sausage (without casings)

cup pine nuts

cup dry stuffing mix

cup raisins

cup boiling water
|
Preheat oven to 400 degrees F.
Heat a large skillet over medium high heat. Brown sausage. Remove from pan and drain excess fat. Crumble sausage into small pieces. Reserve.
Saute apples, celery, and onion in pan until soft. Combine apple mixture, sausage and remaining ingredients except water in a large bowl. Pour water over mixture and toss to coat.
Place stuffing mixture in a deep casserole dish and bake uncovered for 20 minutes.
